Honey Roasted Red Potatoes

honeypotatoes21This might be my new favorite way to cook potatoes.  Well, second to mashed potatoes, because nothing beats that!  It was super easy to throw this together and pop it in the oven to roast while I finished making dinner.  You could taste the sweetness of the honey, but didn’t get an overbearing honey flavor.  I sprinkled a little extra salt on before I served them and they were delicious; crispy on the outside, soft on this inside.  Next time, I will stick them on the top rack and broil them for the last few minutes to make them just a tad crispier.honeypotatoes3

Honey Roasted Potatoeshoneypotatoes

  • 5-6 medium red potatoes, cubed
  • 4 Tbsp butter (half stick), melted
  • 2 Tbsp honey
  • 1/4 tsp salt
  • 1/4 tsp pepper
  1. Grease a rimmed baking sheet.
  2. Spread potatoes on baking sheet in an even layer.
  3. In a small microwaveable bowl, melt the butter.  Then add the honey, salt and pepper and mix with a fork.
  4. Drizzle over the potatoes, then toss gently with your hands to coat evenly.
  5. Cook on the middle rack at 375 for 45 minutes, mixing the potatoes every 15-20 minutes.honeypotatoes4
