Homemade Funfetti Cake with Pink Buttercream

When I think of birthdays, I think of funfetti.  That is exactly why I had to make funfetti cake for my birthday a few weeks ago.  My mom had quite a laugh when I told her I was making my own birthday cake, but honestly, I was so excited to!  As much as I have always loved boxed funfetti cake, there is no way I would have been able to live with myself if my birthday cake was from a box.  I did a little bit of looking around, and came across a recipe from kokocooks.blogspot.ca that sounded great.  Everyone enjoyed it; it was sweet, moist, and delicious!!

Funfetti Cake (from kokocooks)

  • 2 cup all-purpose flour
  • 1 Tbs baking powder
  • 1/2 tsp salt
  • 3/4 cup unsalted butter, room temperature
  • 1 1/2 cup sugar
  • 2 tsp vanilla extract
  • 1 cup milk
  • 5 large egg whites, room temperature
  • ¼ cup multi-colored nonpareils
  1. Preheat oven to 350 degrees F.
  2. With butter, grease 2 9-inch round cake pans. Dust with flour, and shake out excess.
  3. In a medium bowl, sift together flour, baking powder, and salt.
  4. In a larger bowl, using a mixer, beat the butter until light.
  5. Gradually add the sugar, beating until well blended.
  6. Beat in vanilla extract.
  7. Reduce speed to low, and alternately beat in the flour mixture and the milk, beginning and ending with the flour mixture. Do not overmix.
  8. In a large bowl, using a stand mixer with the whisk attachment (if available), beat the egg whites on high speed until stiff peaks form. **I just used a hand mixer, and it worked just fine**
  9. Using a rubber spatula, gently fold the whites into the batter until just combined.
  10. Fold in the nonpareils.
  11. Divide batter between prepared pans, and smooth with a spatula.
  12. Bake about 30 minutes, or until a tester comes out clean.
  13. Transfer to wire racks; let cool for 10 minutes. Invert onto racks, and cool completely.

Pink Buttercream

  • 2 sticks butter
  • 3 1/2 – 4 cups powdered sugar
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 3 drops red food coloring
  • 1 drop yellow food coloring
  1. Cream butter until smooth.
  2. Add powdered sugar gradually.
  3. Add vanilla, almond extract, and food coloring and mix until the color is even throughout.
  4. Frost your cake!
